Ingredients
- 2 pt. grape or cherry tomatoes
- 4 cloves smashed garlic
- 4 tbsp. extra virgin oil
- 1/2 tsp. kosher salt
- 1/4 tsp. grounded black pepper
- 1/4 tsp crushed red pepper flakes
- 1 medium cauliflower head
- 1/8 tsp. paprika
- 1/4 fresh chopped flat-leaf parsley
Preparation Time: 15 minutes
Instructions
- Preheat oven to 400° with the rack in the middle and put garlic and tomatoes in the baking dish before drizzling with 3 tablespoons of oil and sprinkling 1/4 teaspoon salt, red pepper flakes, and salt.
- Clean the cauliflower before placing it in middle of dish. Drizzle the remaining oil over the cauliflower before rubbing to coat. Sprinkle with salt and paprika. Roast for 1 hour.
- Sprinkle parsley over the dish and slice the cauliflower to serve with garlic and tomatoes.
