Whole Roasted Cauliflower, Garlic, and Tomatoes – Keto & Vegetarian recipe – Dr. Jason Jones Elizabeth City NC Chiropractor

Ingredients

  • 2 pt. grape or cherry tomatoes
  • 4 cloves smashed garlic
  • 4 tbsp. extra virgin oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. grounded black pepper
  • 1/4 tsp crushed red pepper flakes
  • 1 medium cauliflower head
  • 1/8 tsp. paprika
  • 1/4 fresh chopped flat-leaf parsley

Preparation Time: 15 minutes

Instructions

  • Preheat oven to 400° with the rack in the middle and put garlic and tomatoes in the baking dish before drizzling with 3 tablespoons of oil and sprinkling 1/4 teaspoon salt, red pepper flakes, and salt.
  • Clean the cauliflower before placing it in middle of dish. Drizzle the remaining oil over the cauliflower before rubbing to coat. Sprinkle with salt and paprika. Roast for 1 hour.
  • Sprinkle parsley over the dish and slice the cauliflower to serve with garlic and tomatoes.
